Here's PEI Chef Michael Smith's Strawberry Argula Salad:
This salad features one of my all-time favourite flavour combination: peppery, nutty arugula leaves tossed with sweet, fragrant strawberries, mellow balsamic and sweet pine nuts. Together these ingredients are far more than the sum of their parts.
YIELD: SERVES 4
Ingredients
4 handfuls arugula
2 cups sliced local strawberries
1/2 cup pine nuts
1/4 cup Balsamic Dressing
Procedure
Simply toss everything together until well combined. That’s it; it’s that simple!
Variation
Try adding some segmented orange sections, or substituting sliced almonds for the pine nuts.
